Well I found this term on Romhacking.net, we have to create tables that lists all the font characters the game uses. And to define which letter correspond to certain byte I have to use relative search. For instance, I can write word SWORD in search program and if this combination of bytes exist in ROM I will found correspondence between letters and bytes.

You can also load the existing tables in WindHex and see the text in the editor.

Yes, but how I'll get this tables?
Even if I'll find table in the internet, I want to know how this text was found.

They are available in the Tools section along with Windhex.
